  4. Remove from the heat and transfer everything to a bowl. Leave to rest at room temperature.
  5. Wrap in cling film and refrigerate overnight or 24 hours.
  6. Transfer the tuna to another dish, sprinkle the fish with sea salt. Drain the oil from the garlic and thyme, you can use the oil again.
