- 1 tomato (peeled and chopped)
- 1 can of tuna
- 1 eggplant (fried until nice brown and peeled, cut into small pieces)
- 1 asparagus (fried until golden, cut into 3 cm pieces)
- 1 boiled egg (cut in half)
- 1~2 teaspoons sesame oil
- 50 ml dashi (or mint)
- 1 tbsp soy sauce (if you are using mentou instead of soy sauce)
- 1 teaspoon sugar (if using unsweetened mint)
- 5 shiso leaves (chopped) to taste
- Salt and pepper
Steps to Make Tomato Tuna Somen
- In a bowl, mix tomatoes, tuna, sesame oil, dashi (basic stew, soy sauce, sugar), half of the shiso leaves. Season with salt and pepper.
- Bring a large pot of water to a boil, add the noodles and cook according to package instructions. Drain the noodles and immediately run them under cold water to stop cooking and rinse with ice water. Drain well and keep in a bowl.
- Pour the mixture from step ① over the noodles. Arrange eggplant, asparagus, eggplant leaves, and shiso leaves on top. Sprinkle pepper on top.
